Il ne suffit pas d\u2019une casserole d\u2019eau bouillante pour faire honneur \u00e0 la tradition\u00a0: la cuisine italienne est avant tout une question de passion, d\u2019intuition et d\u2019amour. Les p\u00e2tes, c\u2019est sacr\u00e9.<\/strong><\/p>\n<p><strong>Culture(s) et gastronomie<\/strong><\/p>\n<p>La l\u00e9gende veut que les p\u00e2tes soient arriv\u00e9es en Italie gr\u00e2ce \u00e0 Marco Polo en 1292. Ce dernier revenait alors d\u2019un voyage en Asie, o\u00f9 les p\u00e2tes (plus pr\u00e9cis\u00e9ment les nouilles) \u00e9taient d\u00e9j\u00e0 popularis\u00e9es. Mais nombreux sont les r\u00e9cits qui alimentent le myst\u00e8re\u00a0: pour les uns, les p\u00e2tes seraient l\u2019h\u00e9ritage de la culture arabe, pour d\u2019autres une cr\u00e9ation du dieu H\u00e9pha\u00efstos. Le fait est que les p\u00e2tes ont probablement exist\u00e9 depuis le n\u00e9olitique, d\u00e8s lors que l\u2019homme a \u00e9t\u00e9 en mesure de produire sa propre nourriture par le biais de l\u2019agriculture. Diff\u00e9rentes formes, diff\u00e9rentes pr\u00e9parations, diff\u00e9rentes cuissons\u2026 On retrouve des traces de \u00ab\u00a0p\u00e2tes\u00a0\u00bb dans de nombreuses cultures, m\u00eame si on peut sans doute attribuer l\u2019industrialisation de leur fabrication \u00e0 l\u2019Italie, qui a vu cro\u00eetre le nombre de moulins et de fabriques durant le Moyen Age.<\/p>\n<p>Pour Allegra, comprendre cet h\u00e9ritage culturel, c\u2019est comprendre l\u2019importance des valeurs que v\u00e9hicule ce plat. Cette grand-m\u00e8re italienne, install\u00e9e en France dans les ann\u00e9es 50, explique\u00a0: \u00ab\u00a0<em>Dans la tradition, les p\u00e2tes sont la nourriture du peuple. C\u2019est un plat familial, convivial, que l\u2019on cuisine avec peu de moyens mais pour les gens qu\u2019on aime<\/em>\u00a0\u00bb.<\/p>\n<p><strong>Le go\u00fbt du vrai<\/strong><\/p>\n<p>Pour Allegra, transmettre cette passion des p\u00e2tes, c\u2019est transmettre une culture :\u00a0\u00ab\u00a0<em>J\u2019encourage mes petits-enfants \u00e0 travailler la mati\u00e8re\u2026 Faire des p\u00e2tes fra\u00eeches n\u2019est pas difficile\u00a0<\/em>\u00bb.<br \/>\nDiff\u00e9rents ingr\u00e9dients sont n\u00e9cessaires pour r\u00e9aliser un p\u00e2ton\u00a0: 300 grammes de farine de bl\u00e9\u00a0tendre, 3 oeufs, 1 cuill\u00e8re \u00e0 soupe d\u2019huile d\u2019olive, 1\/2 cuill\u00e8re \u00e0 caf\u00e9 de sel, 1 cuill\u00e8re \u00e0 soupe d\u2019eau. La suite s\u2019organise comme un rituel\u00a0: \u00ab\u00a0<em>Je tamise la farine devant moi et je creuse un puits dans lequel je casse mes oeufs. Je rajoute l\u2019huile d\u2019olive et un peu de sel. J\u2019utilise une fourchette pour \u00e9craser et m\u00e9langer le tout, tout en ramenant la farine vers l\u2019int\u00e9rieur. Quand le m\u00e9lange est homog\u00e8ne, je p\u00e9tris la p\u00e2te comme ma m\u00e8re me l\u2019a appris\u00a0: avec la paume des mains. Puis je bats la p\u00e2te pour qu\u2019elle soit bien lisse<\/em>\u00a0\u00bb. Une petite demi-heure est n\u00e9cessaire pour la pr\u00e9paration. Allegra laisse ensuite reposer son p\u00e2ton pendant une bonne heure avant de le travailler. \u00ab\u00a0<em>Selon la forme qu\u2019on va leur donner, il y a diff\u00e9rentes mani\u00e8res de travailler les p\u00e2tes\u00a0: avec un rouleau, avec un couteau, une fourchette, un laminoir\u2026<\/em>\u00a0\u00bb pr\u00e9cise Mama Allegra.<\/p>\n<p><strong>Les astuces de Mama Allegra pour la cuisson des p\u00e2tes<\/strong><\/p>\n<p>1\/ Un litre d\u2019eau pour 100 grammes de p\u00e2tes<\/p>\n<p>\u00ab\u00a0<em>Il faut \u00eatre g\u00e9n\u00e9reux en eau, pour que les p\u00e2tes puissent respirer<\/em>\u00a0\u00bb. Pour cela, il faut compter un bon litre d\u2019eau pour 100 grammes de p\u00e2tes. C\u2019est aussi la raison pour laquelle le choix de la casserole a son importance\u00a0: \u00ab<em>\u00a0Il faut choisir la casserole en fonction du volume, des p\u00e2tes qui d\u00e9bordent \u00e0 la cuisson, ce n\u2019est pas bon. La casserole ne\u00a0doit jamais \u00eatre remplie au del\u00e0 des trois quarts<\/em>\u00a0\u00bb. Ne pas h\u00e9siter \u00e0 voir grand donc\u00a0! Certains \u00e9voquent la r\u00e8gle du \u00ab\u00a01, 10, 100\u2033 : un litre d\u2019eau, 10 grammes de sel, 100 grammes de p\u00e2tes, un bon moyen mn\u00e9motechnique d\u2019assimiler les proportions.<\/p>\n<p>2\/ Ma\u00eetriser son feu<\/p>\n<p>\u00ab\u00a0<em>Quand l\u2019eau bout, on peut rajouter les p\u00e2tes, mais attention\u00a0: \u00e0 ce moment-l\u00e0 il faut augmenter le feu, sinon la temp\u00e9rature de l\u2019eau baisse<\/em>\u00a0\u00bb pr\u00e9cise Allegra. Maintenez \u00e0 feu vif pendant les premi\u00e8res minutes de cuisson avant de revenir sur un feu moyen, vous \u00e9viterez ainsi un \u00e9cart de temp\u00e9rature apr\u00e8s avoir plong\u00e9 les p\u00e2tes dans l\u2019eau bouillante.<\/p>\n<p>3\/Faire danser les p\u00e2tes<\/p>\n<p>\u00ab\u00a0<em>Pendant la cuisson, il faut faire danser les p\u00e2tes\u00a0! Ne pas h\u00e9siter \u00e0 les remuer, les faire tourner<\/em>\u00a0\u00bb dit Mama Allegra, \u00ab\u00a0<em>On ne met pas d\u2019huile d\u2019olive dans l\u2019eau, ce n\u2019est pas n\u00e9cessaire si on reste attentif \u00e0 la cuisson<\/em>\u00a0\u00bb. Car oui, le secret des p\u00e2tes bien cuites, c\u2019est de r\u00e9duire au maximum le contact entre elles pendant la cuisson, c\u2019est partie pour une valse !<\/p>\n<p>4\/ Observer et go\u00fbter<\/p>\n<p>\u00ab\u00a0<em>Le temps de cuisson d\u00e9pend des p\u00e2tes et des go\u00fbts de chacun. Moi je les pr\u00e9f\u00e8re al dente, c\u2019est plus savoureux et plus facile \u00e0 dig\u00e9rer\u00a0<\/em>\u00bb explique Allegra. Pour notre sp\u00e9cialiste, pas question de se fier \u00e0 un chronom\u00e8tre\u00a0: \u00ab\u00a0<em>M\u00eame pour les p\u00e2tes industrielles je ne me fie pas aux indications du\u00a0paquet.<\/em> <em>Les p\u00e2tes, \u00e7a se regarde et \u00e7a se go\u00fbte. Il n\u2019y a que comme \u00e7a qu\u2019on peut savoir si elles sont bien cuites. Il faut faire attention \u00e0 la tenue, qu\u2019elles restent fermes, \u00e7a se joue parfois \u00e0 quelques secondes de cuisson en trop<\/em>\u00a0\u00bb.<\/p>\n<p>5\/ Oublier la passoire<\/p>\n<p>\u00ab\u00a0<em>Je ne verse pas ma casserole de p\u00e2tes dans une passoire. Je les retire de l\u2019eau avec un \u00e9cumoire, pour qu\u2019elle conserve un peu d\u2019humidit\u00e9. Cela aide pour incorporer des sauces notamment<\/em>\u00a0\u00bb. D\u2019ailleurs, s\u2019agissant des sauces chaudes, n\u2019oubliez pas qu\u2019elles contribuent \u00e0 poursuivre la cuisson des p\u00e2tes une fois m\u00e9lang\u00e9es \u00e0 celles-ci, prenez cela en compte\u00a0dans vos temps de cuisson\u00a0!<\/p>\n<p>6\/ Passer \u00e0 table<\/p>\n<p>\u00ab\u00a0<em>Les p\u00e2tes, je les fais cuire \u00e0 la derni\u00e8re minute, au moment de servir. C\u2019est un plat qui se mange directement apr\u00e8s cuisson pour garder sa saveur et sa consistance<\/em>\u00a0\u00bb conclut Mama Allegra.<\/p>\n<p>Un conseil de derni\u00e8re minute ? \u00ab\u00a0<em>Apr\u00e8s avoir rajout\u00e9 la sauce, on peut passer le tout \u00e0 la po\u00eale, pas longtemps, juste pour saisir les p\u00e2tes \u00e0 feu vif. Cela leur donne une texture particuli\u00e8re, et \u00e7a laisse le temps \u00e0 tout le monde de s\u2019installer \u00e0 table !\u00a0<\/em>\u00bb<\/p>\n<p>La tentation est grande de demander \u00e0 Mama Allegra de go\u00fbter son plat de p\u00e2tes, mais pas besoin, celle-ci a d\u00e9j\u00e0 mis le couvert\u00a0: \u00ab\u00a0<em>Les p\u00e2tes, \u00e7a se partage. Il y en a toujours assez pour un invit\u00e9 suppl\u00e9mentaire<\/em>\u00a0\u00bb.
