Au contraire, il puise dans ses origines berb\u00e8res la n\u00e9cessit\u00e9 d\u2019adapter ses ingr\u00e9dients \u00e0 la r\u00e9gion dans laquelle il est pr\u00e9par\u00e9. Seuls restent deux \u00e9l\u00e9ments incontournables qui constituent la base de tout bon couscous : un plat de semoule de bl\u00e9 cuite \u00e0 la vapeur dans l\u2019incontournable couscoussier et un plat de l\u00e9gumes et de viande pr\u00e9par\u00e9s ensemble dans un bouillon. Pour le reste, il n\u2019existe pas deux couscous identiques, m\u00eame si quelques pr\u00e9ceptes demeurent essentiels. Ainsi, on le pr\u00e9parera toujours avec une seule viande et non avec plusieurs comme le veut la recette du couscous royal, seulement introduit et popularis\u00e9 par les pieds-noirs d\u2019Alg\u00e9rie apr\u00e8s 1962.<\/p>\n<p>En Tunisie, plusieurs recettes sortent du lot pour leur singularit\u00e9. Dans le Nord du pays, le couscous peut ainsi se r\u00e9v\u00e9ler sucr\u00e9 et \u00eatre servi comme entremet ou p\u00e2tisserie. Il est pour cela garni de raisins secs, mais aussi de dattes, de fruits secs  ou confits et peut \u00eatre parfum\u00e9 \u00e0 la cannelle ou \u00e0 l&rsquo;eau de fleur d&rsquo;oranger. Dans le Sud,  le couscous barbouche est pr\u00e9par\u00e9 avec des tripes et des herbes (feuilles de coriandre, persil) et servi avec des \u0153ufs durs.<br \/>\nDu c\u00f4t\u00e9 de Sfax, le plat prend des accents marins en \u00e9tant servi avec des tranches de poisson grill\u00e9. Dans les \u00eeles Kerkennah, ce sont les poulpes qui sont \u00e0 l\u2019honneur. Un festival annuel leur est ainsi d\u00e9di\u00e9, les m\u00e9nag\u00e8res y mettant toute leur \u00e9nergie pour pr\u00e9parer le meilleur couscous. Chaque ann\u00e9e, du 25 au 27 d\u00e9cembre, vous pouvez d\u2019ailleurs y jouer les jur\u00e9s en d\u00e9gustant \u00e0 souhait et gratuitement les mets en comp\u00e9tition.<\/p>\n<p>Mais un couscous 100% tunisien, c\u2019est avant tout un savoir-faire et une pr\u00e9sentation absolument inimitables. D\u00e9couvrez donc notre recette qui vous assura le succ\u00e8s aupr\u00e8s de vos h\u00f4tes, \u00e0 la fois facile et dans le plus grand respect de la m\u00e9thode tunisienne. Ne manquez pas les astuces dans cette recette.<\/p>\n<p>Ingr\u00e9dients pour 6 personnes :<br \/>\n-500 g de semoule fine<br \/>\n-800 g  de gigot d&rsquo;agneau :<br \/>\n-150 g de pois chiche :<br \/>\n-3 carottes<br \/>\n-3 pommes de terre \u00e0 chair ferme<br \/>\n-30 cl d\u2019huile d&rsquo;olive<br \/>\n-15g de sel fin<br \/>\n-3 Piments verts<br \/>\n-15g de curcuma en poudre<br \/>\n-1 oignon<br \/>\n-20 g de concentr\u00e9 de tomate<\/p>\n<p>1. M\u00e9langer la semoule avec un filet d&rsquo;huile d&rsquo;olive et 2 pinc\u00e9es de sel fin. Malaxer doucement du bout des doigts pour que la semoule s&rsquo;imbibe. Ajouter un verre d&rsquo;eau. Bien m\u00e9langer \u00e0 nouveau avec les doigts jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit bien mouill\u00e9e.<br \/>\nLaisser reposer au moins 20 min \u00e0 temp\u00e9rature ambiante.<\/p>\n<p>2. Couper le gigot en 6 parts de taille \u00e9gales. \u00c9mincer l&rsquo;oignon \u00e9pluch\u00e9. M\u00e9langer la viande avec le concentr\u00e9 de tomates, le curcuma, le poivre moulu et 2 cuill\u00e8res \u00e0 caf\u00e9 de sel.<br \/>\nVerser un filet d&rsquo;huile d&rsquo;olive dans la partie inf\u00e9rieure de la couscoussi\u00e8re. Ajouter l&rsquo;oignon hach\u00e9 et les pois chiches. Laisser suer quelques instants. Ajouter les morceaux de viande m\u00e9lang\u00e9s aux \u00e9pices. Rectifier l&rsquo;assaisonnement en sel et en poivre.<br \/>\nAjouter un verre d&rsquo;eau. Remuer et laisser cuire \u00e0 feu moyen quelques minutes. Couvrir d&rsquo;eau et laisser cuire pendant 30 min.<\/p>\n<p>3. Pendant ce temps, pr\u00e9parer les l\u00e9gumes : \u00e9plucher les carottes et les pommes de terre. R\u00e9aliser une incision dans les piments puis y saler l&rsquo;int\u00e9rieur avec une pinc\u00e9e de sel. Couper grossi\u00e8rement les carottes et pommes de terre.<br \/>\nAjouter au bout d&rsquo;une demi-heure les l\u00e9gumes dans la couscoussi\u00e8re et couvrir d&rsquo;eau \u00e0 hauteur des l\u00e9gumes. Disposer dans la partie sup\u00e9rieure de la couscoussi\u00e8re la semoule et laisser cuire \u00e0 feu moyen jusqu&rsquo;\u00e0 cuisson des l\u00e9gumes.<\/p>\n<p>4. V\u00e9rifier que les l\u00e9gumes sont cuits en plantant la pointe d&rsquo;un couteau. Disposer la semoule dans un plat et la mouiller avec une partie du jus de fa\u00e7on \u00e0 ce qu&rsquo;elle en soit bien imbib\u00e9e. Puis disposer harmonieusement par-dessus la viande et les l\u00e9gumes. Servir aussit\u00f4t.<\/p>\n<p>Le secret d\u2019un couscous parfait r\u00e9side ainsi dans le fait d\u2019imbiber la semoule avec le bouillon.
